Quang Noodles

Vietnamese food : Quang noodles
Serves: 4
Preparation time: 20 mins
Cooking time: 60 mins

Ingredients:
1 liter broth
300g (10oz) pork ham, cut into thin slices
200g (7oz) Vietnamese Sausage (or Hue Sausaga), cut into thin slices
300g (10oz) small fresh shrimps, deveind
1kg (2.2lbs) fresh Quang noodle (or 500g of dried flat rice noodles)
1 teaspoon turmeric powder
1 teaspoon annatto seeds (or annatto powder)
3 teaspoons stock granules
2 teaspoons fish sauce
1 teaspoon salt
2 teaspoons sugar
½ teaspoon ground pepper
1 cup cooking oil
2 sesame rice paper wrappers
60g (2oz) roasted peanuts, pestled
4 cloves garlic, bruised
200g (7oz) mint leaves and lettuce, well-washed, thinly sliced
1 cup bean sprouts
1 tablespoon minced saw-leaf herbs
100g (3 ½ oz) shredded bananaflower, soaked in water with a teaspoon of lime juice
5 shallots, thinly sliced
1 lime, quartered
10 small green chilies

Recipe:
Heat a tablespoon of cooking oil in a skillet. Add annatto seeds and stir-fry over low heat to lose their color. Discard the seeds. Set annatto oil aside in a bowl.

Add 2 tablespoons of cooking oil, shallots and garlic to the skillet and fry. Add pork, stir-fry for about 3 minutes. Season with 2 teaspoons of stock granules, a teaspoon of fish sauce, a teaspoon of sugar, a pinch of turmeric powder. Add shrimps to stir-fry togather. Add ½ cup of broth to the skillet. Simmer for about 20 minutes. Mix well and season again to have a pleasant taste. Add annatto oil and ½ teaspoon of pepper.

Heat a pot with broth. Bring to a boil, season again and keep it hot on the cooker.

Scald Quang noodles in boiling water. If using dried flat rice noodles, soak in hot water for 5 minutes, then scald in boiling water for 2-3 minutes until just soft. Take out and drain noodles, mix with a tablespoon of cooking oil to prevent the noodles from sticking together.

Grill sesame rice paper wrappers until yellow.

Add noodles (of flat rice noodles) to a bowl. Arrange sausages, pork, shrimps over. Sprinkle with a little sauce from the skillet with shrimps. Then, add hot broth to wet noodles. Sprinkle with roasted peanuts and saw-leaf herbs on top.

Serve with grilled rice paper wrappers, a dish of mixed vegetables, lime and small green chilies.

Notice: Quang noodles is eaten in a dryness style, which means noodles is only wetted with broth and do not pour too much broth like pho or hutieu. To have a good taste, Quang noodles must be eaten with a lot of vegetables. You can add crab meat, chicken breast meat, fish ballds, chicken eggs or thinly sliced squids to have a more attactive and plentiful bowl of Quang noodles.

Disasters mustn’t frighten you.
In our hard time everybody should know how to behave if something terrible occurs. In this case I mean different natural disasters. To my great regret all natural disasters have got rather an unpredictable nature though some of them are possible to forecast but anyway in most cases natural disasters come up suddenly shocking everybody around. It seems to me they are used to falling down on us right from the heaven when having chosen the moment when we are in the most vulnerable position.

I hope you watch your TV set every day. As follows from this you are always aware of different shocking news such as an earthquake in Iran or a flood in China. It’s clear visible from the screen that in most cases people are exposed to an uncontrollable wild panic. So summarizing the value of such typical scenes I can say that people are frustrated and they don’t know what to do in such emergency situations. In fact it would be not so bad for them to stay passive and do nothing in a particular dangerous situation. But the matter is that they usually do many wrong things which seem to be spontaneous and certainly nervous. But wise people have always told us that we should stay calm like eternal rocks. If you are calm and careful you’ll overcome any kind of a natural disaster. The main thing in such situations is to know for sure what to do. You should be able to recall the exact list of your subsequent actions in an emergency case.

For example you should know what to do if the ground starts shaking violently under your feet. Sure this may occur at any time and only some scientist may find out an approximate time of this disaster. So if you don’t want to be one of numerous possible victims you should do quite definite things in this situation.

For example you are at home sitting on the sofa now. And at this moment you feel the whole city starts shaking. Just stay where you are. Wait until it stops, then leave your home in the safest way. Certainly you can go on your car to another city but I don’t advise you to cross any bridges near your area. I hope you know why you shouldn’t do this. Some earthquake tips.
We are living in the world full of numerous sudden dangers. A great variety of traps surround us. In fact God only knows whether we’ll get into one of them or pass by luckily. Just let me tell you a few words about this. Once upon a time I was just an average college student. In fact I think that I didn’t differ much from other student of that college as well as other ones in my city. So I remember one day of that time. In general that day was quite the same as others including my traditional everyday going to college and coming back home.

So that day I was making my way along the street and everything seemed to be quite routine at that day. But when I was passing by a bus station I saw a man lying on the pavement near the stairs and a crowd gathered around him. So I came up immediately and my eyes focused on a terrible scene. To cut a long story short I can say that his had was red with blood. I mean that man lying on the pavement. As follows from this the man just lost his ground and fell when walking up the stairs. As the result he hit his head heavily and died immediately. The most surprising thing was that he slipped on rather a smooth ground surface. I couldn’t see there a slight resemblance of ice or other slippery things.

He just fell and died without any natural accidents or something like this. Was it a sort of destiny? In fact I don’t know, but from that moment I turned to be superstitious and suspicious. A new urge of mine has recently appeared. I’ve started being concerned with my personal security. So every day I keep on thinking how I should spend this day without any accidents. I’m greatly interested in diverting any kinds of disasters. From my point of view if I prepare for a particular disaster in the right way I won’t be vulnerable most probably.

Thank God that with the advent of different modern sources of information we have got an opportunity to share our knowledge concerning adverting disasters. I can also share something with you. For example I can tell you what you should do during an earthquake. When this nasty disaster occurs you shouldn’t be exposed to panic. Just stay calm. Don’t go out during this. When this earthquake is over you can abandon your house. By the way I don’t advise you to use elevators to go down from the upper floor because this may be dangerous. In this case you should use stairs. Moreover you should stay away from any concrete structures because they can simply fall down on you. Be attentive and you’ll survive.
